Champagne Vinaigrette Dressing

This is my go-to champagne herb vinaigrette dressing. I try to avoid store-bought dressings whenever possible. I like to have a couple dressings on hand in the refrigerator so I can throw a salad together quickly or use it as a marinade for fish or chicken when needed. It is a perfect vinaigrette dressing for every day and even for entertaining guests. It goes well with a variety of greens and looks pretty with all the fresh herbs. I use it most often with mixed greens or red and green butter lettuce and thinly sliced apples, goat cheese…

Santa Rosa Chicken Salad

Santa Rosa Chicken Salad is one of my all-time favorite recipes from the Pasadena Junior League Cookbook, “California Sizzles”. I received the cookbook as a wedding gift, and after 22 years, it is still my most used cookbook. You won’t find any mayo in this chicken salad favorite. Consider this a perfect salad for your leftover chicken and any vegetables you want to add to the mix. It is always a hit in our house for family or guests. I promise there won’t be any left and everyone will beg for the recipe…

Buttermilk Pancakes

Buttermilk pancakes, especially with mini chocolate chips, are a weekly breakfast in our house. I am not a fan of boxed pancake mix. The page-long ingredients give me the creeps, not to mention the boatloads of sugar, and they seem only to make pancakes that resemble hockey pucks. I found this easy recipe years ago, and it has been a go-to weekday breakfast ever since. To make the prep faster for the morning rush, I pre-mix the dry ingredients into small plastic containers, and I write the dry ingredients on the lid. This way, in the mornings…

Chinese Chicken Salad

This Chinese Chicken Salad is one of my boy’s favorites. Ok, so they have been known to pick out the vegetables. I love the recipes that work for a make-ahead dinner at home, for a potluck get together, and for a luncheon. This recipe is from my all-time favorite cookbook, the Barefoot Contessa “Parties!”.  Ingredients: 4 split chicken breasts (bone-in, skin-on) Good olive oil Kosher salt Freshly ground black pepper 1/2 pound asparagus, ends removed, and cut in thirds diagonally 1 red bell pepper, cored and seeded 2 scallions (white and…

Roasted Pork Tenderloin

This Roasted Pork Tenderloin recipe is one of our family staples. I serve it to the boys more often than I would like to admit. It is just so easy and tasty that I can’t resist making it. I usually make two tenderloins and use the leftovers for the following night’s dinner of Pork Fried Rice. I also make it early in the day before the after school craziness, so it is ready and waiting for us when we get home. It is also very good served room temperature for a summer meal. Ingredients 1 Pork…
