Get Your Greens Smoothie

I will admit that I am not the most creative person with the green smoothies. I don’t like them loaded with fruits (a.k.a. Jamba Juice), that kind of defeats the purpose of a veggie smoothie, doesn’t it? I figure if I am going to have boatloads of sugar, it will come in the form of a cookie or wine, just being honest here. I am big about feeding my boys a good hearty breakfast, but I, myself, am not a big breakfast person. Yes, I am guilty of the “double-double” espresso…

Molten Chocolate Lava Cake

This molten chocolate lava cake, from a cooking class with Something Homemade, is one of our family favorites and a go-to for dinner parties. I love the desserts in the individual servings because they seem to keep me from eating 3-4 portions. Even better, it can be prepped a day ahead, kept in the refrigerator. Mine don’t look as pretty as the one made in the class, but the ramekins still seem to be licked clean every time. If you want to be fancy, dress it up with my homemade Fresh Whipped Cream, berries and a…

Fresh Whipped Cream

A quick and easy whipped cream to top all your desserts. The vanilla bean paste is what sets it apart from other recipes. You can omit the vanilla if you prefer a basic whipped cream. The perfect compliment to the Molten Chocolate Lava Cakes. Ingredients 1 cup heavy whipping cream 3 tablespoons powdered sugar 1 teaspoon vanilla bean paste (or 1/2 teaspoon vanilla) Directions Place the sugar, vanilla and whipping cream in a mixing bowl. Whisk until cream reaches stiff peaks. Store any unused portion in an airtight container for up to 10 hours. When ready to use, re…

Double Chocolate Cookies

I have a love affair with chocolate and cookies, so it is no wonder these are a favorite of mine. I first tried this recipe a few years ago at a cooking class with Something Homemade and it is forever a winner in our house. I do think the name should be changed to Triple Chocolate Cookies since it uses three kinds of chocolate. The more the merrier, right? Also, add a little boost of espresso powder and now we are talkin’. Ingredients 6 ounces unsweetened chocolate 1 1/3 cups sugar 8 tablespoons unsalted butter at room temperature…

Pumpkin Pancakes

Is your family bored of the traditional pancakes and you want to change up your breakfast meals a bit? These pumpkin pancakes are a perfect alternative to regular buttermilk pancakes. I am big about sending my boys off to school with a good hearty and nutritious breakfast. I sometimes find it challenging to have family weeknight dinners with our busy sports schedules, so a good pancake breakfast is my clever way to get them out of bed and touch base with the events for the day. You must try these pumpkin pancakes. This recipe serves 4-6. Feel free to…
